Future Chef Success for Louis and Tom

Louis H and Tom C have earned the fantastic opportunity to represent The Gregg School in the South East Finals of Springboard’s Future Chef competition. As part of their achievement, they were awarded mentoring from professional chefs who generously volunteer their time to support young culinary talent.

The boys recently spent a full day working with Sam May, a highly accomplished Royal Navy chef. During his service as personal chef to Senior Officers, Sam has cooked for the Prime Minister, members of the Royal Family, and foreign diplomats. He visited The Gregg to help Louis and Tom refine their dishes to fine‑dining standard, offering expert guidance and hands‑on coaching.

Yesterday, the boys continued their preparation with Executive Chef Barny Cross from Harrison Catering. Barny invited them to his base at the Royal Alexandra and Albert School in Reigate, Surrey, where they fine‑tuned their dishes and focused on organisation and timing to ensure they can confidently produce their menu within the 90‑minute competition window. He also gave them a behind‑the‑scenes tour of his large‑scale catering operation, offering valuable insight into the industry.

Louis and Tom impressed both mentors with their enthusiasm, eagerness to learn, gratitude, and natural cooking talent. The Gregg School is incredibly proud of their achievements so far.

The next—and penultimate—round of the national competition will take place in Brighton on Tuesday 10th February. Please join us in wishing them the very best of luck!
